I love to bake, but for some reason I cannot make peanut butter cookies. It’s like that one “unicorn” that I just can’t figure out. I’ve tried multiple recipes and the dough ends up in the garbage.
A few years ago I was eating to a party and I wanted to make something gluten free. A handful of people attending the party were gluten free and I wanted to bring something they could have. Thanks to Google I found a few recipes for gluten free peanut butter cookies. My favorite and most foolproof recipe one the required only 4 ingredients. Yes, people only 4! It wasn’t like they were asking for 4 weird gluten free ingredients most people wouldn’t have. It called for 4 normal ingredients. I made them for that party and that recipe has turned into my to go recipes for almond butter, peanut butter, or sunflower seed butter cookies. I hope you enjoy this super easy gluten free peanut butter cookie recipe made with completely normal and easy to find ingredients.
1 cup of peanut butter
1 cup of sugar
1 teaspoon of vanilla (or 1 teaspoon of vanilla and a splash of almond extract)
Preheat over to 350
1-Combine all ingredients.
2- Spoon one tablespoon of the dough onto an uncreased cookie sheet roughly 1 inch apart.
3- Flatted the mounds with the tines of a fork in a crosshatch pattern (this is really important to do, these cookies do not spread out at all).
4- Bake until golden brown around the edges (this was about 10 minutes for me).
5. Repeat until all dough is gone.
