Patriotic Mini Trifles, Kiwi and Hope, Abby Maddy Inspired

I’m a huge fan of simple, classic desserts. I love a classic scone and I’m a huge fan of cupcakes. When I’m thinking of a recipe to share with you I don’t want to add more to what I’m guessing is an already full plate. I try to use a combo of already made ingredients and fresh ingredients.

I created today’s recipe with the 4th of July in mind. So be thinking of red, white and blue. However, this recipe is easy to change and adapt to whatever seasonal fruit you have on hand. I knew I wanted a recipe that I’d be able to layer colors with, and I wanted a recipe that would help you feel fancy. 🙂 Without further ado I give you Patriotic Mini Trifles:

Ingredients
– 1 to 2 cup of 1/2 cubes of pound cake or angel food cake
– 2 cups of whipped cream (if you’re dairy free sub it whipped coconut cream). Also, I’m talking about fresh whipped cream. The stuff you whip with a mixer, not the stuff from a can.
2 cups of blueberries
2 cups of strawberries
4 wine glasses or any clear glass that will allow you layers of ingredients to show through. And yes I know my pictures only have two wine glasses, but that’s because we only own to wine glasses. 🙂

Directions
Tip: The goal of the layering is to have each layer show through. With each layer make sure you push that layer all the way to the glass so it’s easy to see.

1- Spoon about 2 tablespoons (eyeball it, it doesn’t have to be precise) of whipped cream into the bottom of your glass.
2- Take some of the blueberries and layer on top of the whipped cream, being careful to push some of the blueberries to the edge so that a layer of blueberries is visible on the outside of the glass.
3- Spoon about 2 tablespoons (eyeball it, it doesn’t have to be precise) of whipped cream on top of your blueberry layer.
4- Layer two layers of strawberries onto of your whipped cream.
5- Spoon about 2 tablespoons (eyeball it, it doesn’t have to be precise) of whipped cream on top of your strawberry layer.
6- Layer about 1/2 an inch of pound cake on-top of the whipped cream. Feel free to add more or less depending on how cake you want it to be.
7- Repeat with a layer of whipped cream, blueberries, strawberries, and top with a layer of whipped cream.
8- Eat right away or let them sit for 1/2 an hour at the most. If the trifles sit too long the pound cake will get mushy.
